Black Rice, as the name suggests, is a variety of rice which is deep black in color. It turns purplish when cooked. This color is due to the presence of high content of anthocyanin (an antioxidant present in dark fruits and vegetables like blueberries, dark grapes, purple cabbages, purple brinjals and so on) in it. In India, Manipur is the only state growing black rice where it is known as Chakhao and is consumed in Manipur and other North-Eastern states where it is considered a delicacy having traditional significance. Black rice is heavier than other varieties of rice when cooked and has a nutty taste like brown rice. It is the new ‘superfood’ with its high nutritional value. Unlike the white varieties of rice where vitamins are lost, black rice retains them. It comes packed with vitamins and micronutrients like vitamin B1, B2, B6 and B12, vitamin E, folic acid, iron, zinc, calcium and phosphorus and amino acids like lysine and Tryptophan. The bran of black rice has the highest content of the antioxidant anthocyanin than in any other food. Hence it is good as cancer preventive, cholesterol reducing food (with a low glycemic index of 42), good for the heart, kidneys, liver, and so on. Dishes with Black Rice:

Salad: Make a healthy salad with 3 cups of cooked Black Rice, I cup of cooked quinoa, 2 carrots, ½ cubed and blanched pumpkin, roasted pepitas tossed together and drizzled over with a dressing of olive oil, lime juice and red wine vinaigrette. Garnish with sage, parsley and other herbs.

Paella: Heat olive oil and sauté onion, garlic and sliced chorizos. Then add squid, fish, pipis and fish stock and bring to boil until the stock evaporates. Add cooked black rice when the pipis open. Add salt, lemon juice, pepper and paprika to season. Discard unopened pipis. Garnish with herbs.

Granola: Mix ¼ cup of brown sugar and honey each with the juice and zest of two oranges in a bowl. Add a cup of puffed Black Rice and rolled oats each, ½ a cup of desiccated coconut, cranberries and almonds each and mix. Bake for 2 ½ hours at 110 degrees.

Pudding: Boil Black Rice, ½ cup of syrup, ½ teaspoon salt and a teaspoon of orange zest in 2 cups of water. Simmer for 30 minutes on low heat. Remove from heat and add about a cup of coconut milk and a little vanilla extract ( Buy : ) Serve.
