Bhut jolokia is a type of hot chili that is grown in the north-eastern part of India, especially in the state of Assam. This specific type of chili is also found in the states of Nagaland and Manipur as well. The scientific name of this chili is Capsicum Chinese Jacq. and it is also known as Borbih jolokia, Naga jolokia, Nagahari, Naga Morich, Raja mirchi, Dorset naga, and ghost chili and king cobra chili. There has been a debate regarding Bhut jolokia about the breed of this chili. Some experts claimed that this breed belongs to the Capsicum frutescens family while some experts were of the opinion that the chili is of Capsicum Chinese breed. Recent DNA tests conducted on Bhut jolokia has confirmed that this chili is an interspecies hybrid nature with most properties of Capsicum Chinese and some genes of Capsicum frutescens.

There is also controversy regarding the pungency level of the bhut or Naga jolokia chili as well. While some demanded that the Red Savina pepper is the most pungent of all the chilies in the world, some believed that Naga Morich can beat the Red Savina pepper any day in pungency. In a research conducted by the Defense Research Laboratory of India, in the year 2000 it was found that the bhut or Borbih jolokia has a rating of 855,000 units on the Scoville scale, which is the global benchmark for test of pungency. Another Indian company tested naga jolokia through HPCL method that revealed that the chili has a rating of 1,041,427 units. In 2005, Professor Paul Bosland of New Mexico State University Chile Pepper Institute found out that the naga chili grown out of a seed in New Mexico had a Scoville rating of 1,001,304 SHU through HPLC. Based on this test results Guinness World Records in February of 2007 certified the bhut jolokia to be the hottest chili in the world.

There is one interesting observation regarding the pungency level of bhut jolokia that has come to the forefront from an Indian study that was conducted in 2005. That is the level of pungency in this breed of chili highly depends on the environment on which it is grown. In the study bhut or naga jolokia grown in two different parts of country was compared against each other. One type was grown in Assam and other type was grown in Gwalior. The report of study showed that the pungency of the chili is decreased almost 50% when it is grown at the more arid temperature of Gwalior.
